The 21st century woman was a woman from the 21st century who had herself frozen sometime after all the cyborgs enslaved humanity, only to be unfrozen in the 31st century. She met Fry at The Hip Joint and the two dated briefly. She attended Fry's funeral ^[1] and implied that he wasn't "great for snu-snu".
